Is it possible to just have a head with no body? I dont want the body there at all, not even transparent...is that possible?

Um, not with the version 2 actors per se -- though you could make him/her nude and then make the body fully transparent.

There was a male actor for v1 where you could turn on/off every body part, so you could have a headless person, or a decapitated head, or variations of amputation, but it was v1.

Is this something that could be easily added to v2? It'd be great for my movie (zombies!) for body parts lying around, and zombies without an arm and/or leg.

You can use the old V1 body parts certainly but the problem is that while a V1 Actor was built out of parts, the V2 actor is one big mesh, so it can't be broken up the same way...

Well what i have done is taken two men and made everything tranzparent on on of the guys except for his hair. I then moved it so now guy 2 has a beard made out of guy ones hair.

are there any beards besides decals that i would be able to use insted of this?

No, but what you did sounds like it is HORRIBLY inefficient and could very well slow things down. Furthmore, if you try to use facial expressions then it will be a mess. We use decals for beards precisely in order to allow for full facial expressions and facial shape modifications.

I would highly recommend against doing what you described.

...and speaking of innovation, I need discarded clothing and I've been experimenting with creating a person withall parts texured as fabric and them squelching and contorting, lattening him etc. Surely inefficient, it sort of works, - does anyone have any other ideas?

I put a person under the bedclothes by "whiting up" her duplicate to match the covers, tucking in the head, scaling it up a bit, and tucking whole thing over the sleeper.
